Bitters 101
Bitters are considered the “seasoning” of the cocktail world. They are made from aromatic plant extracts and used in a wide variety of cocktails, including the Manhattan, Martini, Old Fashioned, Negroni and Sazerac. Recipes typically call for a dash of bitters, which is typically about 6 to 8 drops or 1/8th of a teaspoon. Bitters come in hundreds of flavors — from celery to cherry to lavender. The most popular options, however, are Angostura, Peychaud’s and orange bitters.
